
Watermelon Radish Feta Canapés

Ingredients
- 6 ounces feta cheese, room temperature
- 3 ounces cream cheese, room temperature
- 1 small shallot, peeled, finely chopped
- 1 garlic clove, minced
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- ¼ teaspoon salt
- grind of fresh pepper
- 2 tablespoons chopped fresh mint leaves
- 2 large watermelon radishes or 1 large bunch smaller radishes

- 1. Prepare the whipped feta by placing the feta, cream cheese, shallot and garlic in a food processor bowl fitted with the steel blade. 2. Pulse to combine. 3. Add 2 tablespoons olive oil, lemon juice, salt and pepper. Process until smooth.4. Wash and dry radishes. 5. Using a mandolin, thinly slice radishes. Put six circular slices aside. 6. Spread a thin layer of feta spread on half of one side of remaining radish slices. 7. Roll to create a horn shape. Secure with toothpick. 8. Thinly julienne the six slices of watermelon radish.
Garnish
- Insert julienne radish and sprig of mint or parsley into each canapé.
