Watermelon Radish Feta Canapés

Ingredients
  

  • 6 ounces feta cheese, room temperature
  • 3 ounces cream cheese, room temperature
  • 1 small shallot, peeled, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • grind of fresh pepper
  • 2 tablespoons chopped fresh mint leaves
  • 2 large watermelon radishes or 1 large bunch smaller radishes

  1. 1. Prepare the whipped feta by placing the feta, cream cheese, shallot and garlic in a food processor bowl fitted with the steel blade.
    2. Pulse to combine.
    3. Add 2 tablespoons olive oil, lemon juice, salt and pepper. Process until smooth.
    4. Wash and dry radishes.
    5. Using a mandolin, thinly slice radishes. Put six circular slices aside.
    6. Spread a thin layer of feta spread on half of one side of remaining radish slices.
    7. Roll to create a horn shape. Secure with toothpick.
    8. Thinly julienne the six slices of watermelon radish.
Garnish
  1. Insert julienne radish and sprig of mint or parsley into each canapé.
