Summer Fruit Sandwiches
THERE’S JUST SOMETHING MAGICAL about tomato season. As someone who prefers more savory notes over sweet ones, I wanted to make a dessert sandwich that brought both the fresh, savory aspect of summer tomato with the subtle sweetness of strawberry flavor we all love and crave.

- Using a stand mixer, whisk mascarpone cheese until smooth.
- Next add the heavy whipping cream, powdered sugar, and vanilla bean paste to the mixer. Whisk together until stiffpeaks form, about 5 minutes.
- Chiffonade fresh basil and gently mix in basil with your cream using a spoon.
- Slice a tomato into two fairly thick slices.
- Cut the tops off the strawberries and slice them in half.
- Cut crusts off bread slices and spread your basil cream mixture onto each slice of bread.
- Add one tomato on two slices of bread. On two more slices of bread, add about three strawberries (flat side down) in a diagonal pattern in the middle of the bread. Cover each fruit slice of bread with the other basil cream covered slice of bread and gently press together.
- Individually wrap each sandwich with plastic wrap and place in the fridge for an hour to set.
- After the hour is up, unwrap, cut each sandwich diagonally along the fruit and enjoy!
