Split Pea & Ham Toast

Spring is one of my favorite seasons. Toast is one of my favorite meals. In this issue, it’s my pleasure to bring you a fresh, new perspective on how to enjoy a favorite meal of mine with ingredients spring has to offer.

Split Pea & Ham Toast

Servings: 4

Ingredients
  

  • 1 cup sugar snap peas
  • olive oil
  • goat cheese spread
  • pea shoots
  • lamb ham
  • 1 sourdough bread loaf

Directions
 

  1. Steam sugar snap peas until tender, set aside.
  2. Cut lamb ham into thin strips.
  3. Cut sourdough into thick slices and toast the bread in a pan with olive oil until golden brown.
  4. Once toasted, add goat cheese spread to the toast.
  5. Next, roll up about 4 individual pieces of lamb ham. Place them in a line on the toast.
  6. Sprinkle toast with sugar snap peas.
  7. Garnish with some pea shoots and enjoy!
