Smoked Watermelon Granita

Indoor or outdoor smoking is a popular season pastime. But you can have fun with more than beef and chicken! Make time for desserts like this simple, frozen watermelon to scoop into cups and enjoy by the lake.

Ingredients
  

  • 1 Medium-sized Watermelon
  • 1/3 cup Honey
  • 1/3 cup Fresh Squeezed Lemon Juice

Directions
 

  1. Preheat smoker to 250 degrees.
  2. Cut watermelon into cubes and press with paper towels to remove any excess water.
  3. Once you’ve removed the excess water, place on a sheet tray and brush the watermelon with honey.
  4. Place watermelon into the smoker for 10 minutes.
  5. After you pull the watermelon out of the smoker, place in the freezer for 1.5 hours to refreeze the watermelon.
  6. Next, add the watermelon to a blender with the lemon juice and blend well.
  7. Pour the watermelon puree into a square baking pan and place back into the freezer for about 4 hours or overnight.
  8. Remove watermelon out of the freezer, fluff with a fork and serve! Feel free to get creative with your favorite summer garnishes like Mint or Basil!
