Total Time 40 minutes
Servings: 6

Ingredients

  • 1 pie crust or recipe for pâte sablée, a classic French dough
  • 1 1/2 pounds plums, pitted and sliced in quarters
  • 1/3 cup brown sugar
  • 1 tablespoon melted butter
GARNISH
  • 6 fresh sage leaves, chopped
  • 10 ounces heavy whipping cream
  • 1/2 teaspoon vanilla bean paste

Directions

  1. Heat oven to 400 degrees.
  2. Roll out pie crust and place on a baking sheet brushed with oil so it doesn’t stick.
  3. Add sliced plums, skin side down, to the crust leaving about 1 1/2 inches of space around the edge to fold over.
  4. Sprinkle brown sugar over plums.
  5. Fold pie crust over edge of plums.
  6. Brush top of pie crust with melted butter.
  7. Put plum tart in oven to bake for 35 – 40 minutes or until crust is golden brown. Remove tart from oven and let rest 10 minutes before slicing.
  8. Garnish with sage-infused whipped cream and enjoy!
