Cardamom Buns with Orange Glaze

Cardamom Buns with Orange Glaze

Ingredients
  

DOUGH
  • 1 cup whole milk, lukewarm
  • 1/3 cup granulated sugar
  • 1 tablespoon active dry yeast
  • (or 2 ¼ tsp instant yeast)
  • 7 tablespoons unsalted butter
  • melted and cooled slightly
  • 1 large egg
  • 1 teaspoon salt
  • teaspoon ground cardamom
  • cups all-purpose flour (+ 1/2 cup)
FILLING
  • 7 tablespoons unsalted butter, softened
  • 1/3 cup light brown sugar
  • teaspoon ground cardamom
  • Zest of 1 orange
ORANGE GLAZE
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • ½ teaspoon orange zest
  • Splash of milk, if needed to thin
TOPPING
  • 1 egg
  • 1 tablespoon milk (for egg wash)
  • Pearl sugar or coarse sugar (optional)

Directions
 

  1. In a large bowl, whisk together warm milk, sugar, and yeast. Let it sit for 10 minutes until foamy.
  2. Stir in melted butter, egg, salt, and cardamom.
  3. Gradually mix in flour until a soft, slightly tacky dough forms. Knead for 8–10 minutes until smooth and elastic.
  4. Cover and let rise for 1–1½ hours or until doubled in size.
  5. In a small bowl, mix softened butter, brown sugar, cardamom, and orange zest until smooth.
  6. Roll the dough into a large rectangle (about 12×20 inches).
  7. Spread filling evenly. Fold the dough lengthwise in thirds (like a letter).
  8. Cut into 12 strips, twist each strip, and shape into knots or coils.
  9. Place knots on a parchment-lined baking sheet, cover, and rise 30–45 minutes.
  10. Preheat oven to 375°F. Brush buns with egg wash and sprinkle with pearl sugar.
  11. Bake 15–20 minutes or until golden brown.
  12. In a small bowl, whisk powdered sugar, orange juice, and zest until smooth. Add milk if needed for a drizzling consistency.
  13. Let buns cool slightly before drizzling generously with orange glaze.
